Why cats can’t taste sweetness — and dogs can

Offer a cat a spoon of ice cream and it may lick the fat and cream, but it is tasting nothing sweet — cats are physically unable to detect sugar. That is not a quirk. It is a fossil of the cat's evolution into a strict meat-eater, and it explains a surprising amount about what your cat needs in its bowl and why dog food and cat food are not interchangeable.

A broken gene, not a preference

Sweet taste in mammals depends on a receptor built from two genes working together, Tas1r2 and Tas1r3. In cats, the Tas1r2 gene is broken — a pseudogene, present but disabled by mutations, so the sweet receptor is never fully built. Every cat, from a lion to a kitten, carries the same defect. It is not that cats dislike sugar or ignore it; the signal simply never reaches the brain, because the hardware to detect it was switched off deep in the cat family's past.

Evolution tends to discard what it does not use. A pure meat-eater meets almost no sugar in its natural diet, so a sweet detector earns its keep for nothing, and mutations that disabled it carried no penalty. Dogs, which evolved to scavenge a broader diet alongside humans, kept a working sweet receptor — one more difference in the dog-versus-wolf and dog-versus-cat story, and a clue that the two pets are built for different plates.

The cat is an obligate carnivore, by design

The dead sweet gene is one symptom of a whole body committed to meat. A cat is an obligate carnivore: it must eat animal tissue to survive, not as a preference but as a hard requirement, because its metabolism has outsourced several jobs to its prey. A cat cannot make enough taurine, an amino acid abundant in meat and scarce in plants. It cannot convert plant precursors into vitamin A or into the fatty acid arachidonic acid, so it needs the ready-made animal forms. It runs its protein metabolism at a permanently high idle and needs far more protein than a dog.

Dogs sit in a different place. A dog is a facultative carnivore that scavenged its way into an omnivore's flexibility, which is why it can digest starch — thanks to those extra starch-digestion genes — and get by on a mixed diet. A cat cannot follow it there. This is the single biggest reason a cat should never live on dog food: it lacks the meat-supplied nutrients a cat's broken-down biology can no longer make for itself.

Why taurine is a matter of life and death

Taurine is the sharpest example of the cost of being a carnivore. Because a cat cannot synthesise enough of it, a diet short on taurine slowly starves the heart muscle and the retina. In the 1980s, vets traced an epidemic of feline dilated cardiomyopathy — a failing, enlarged heart — to taurine-deficient cat foods, along with cases of irreversible blindness. Once manufacturers added taurine back, feline heart disease from this cause largely disappeared.

That is why every reputable cat food now lists added taurine, and why the complete-and-balanced statement on the label matters even more for cats than for dogs. A cat is running without a safety net its ancestors sold off in exchange for a diet of pure meat. The food has to put the net back.

What this means for the bowl

The practical rules fall straight out of the biology. Feed a cat a diet built around animal protein and formulated as complete for cats, never a dog diet and never a casual home-made or plant-based one without veterinary formulation, because the missing taurine, vitamin A and arachidonic acid are not optional extras.
